Additional hints:
Padow's own Smithfield's finest Old Cure Hams and Country Hams should be sliced very thin and piled high for best plavor and served at room temperature. For a buffet, plan to serve 2 - 3 thin slices of ham per person, particularly if you are offering other meat selections.
Padow's 7 lb. boneless or 12 lb bone-in hams should provide enough ham for approximately 50 for buffet or 35 for dinner.
Time to make the Ham Biscuits!
The Deli Mama suggests that you prepare 2 large size (2 1/2" diameter) ham biscuits per person for lunch or 3 cocktail size (bite size) ham biscuits per person for appetizers. Remember dear, this is simply an estimate. You may prefer a little more or a little less ham than the guide below recommends.
1 lb = 3 dozen (36); 2 lbs = 6 dozen (72); 3 lbs = 9 dozen (108); 4 lbs = 12 dozen (144); 5 lbs = 15 dozen (180)
