#660 One 1/2 pound of hickory smoked Padow's Old Cure Ham and one 1/2 pound of alder wood smoked wild Pacific Salmon. A delightful combination back again this year by popular demand. Padow's Smithfield's finest Old Cure Ham is prepared using an age old method of dry salt curing and hickory smoke aging for a minimum of six months in Smithfield North Carolina exclusively for Padows Hams in Virginia. This produces a delicate smoky flavor and a firm, salty ham. After the salmon are caught and brought to the smokehouse they are filleted and then only the best salmon are selected for smoking. After selecting, the salmon fillets are soaked in brine and then placed in the smoker.
